Is using a white card as simple as pointing the camera at a very white surface, like my homemade, taped together, white cardboard panels that I use to reflect light back on my subject, or do I need to buy something special for this?
Generally that is what it is. Some people use a fancy card that is made in “white” color. There are some lens caps that can be directly used on the lens, but white balance can be adjusted simply by using a white surface as a reference or setting it in your camera.
